Oven Roasted Onions and Fennel

Yield 4 Servings


Ingredients
2 bulb Fennel, with 1/4 cup fronds reserved
2 large Onion, one white/yellow, one red
2 tbsp Red wine vinegar
tbsp Lemon Juice
Salt and pepper
Cooking spray

Preparation
Preheat oven to 400 degrees. Prepare a large glass baking dish with the spray. Thinly slice fennel bulb, onion, and chop fronds. Place in pan, pour lemon juice and vinegar over them. Toss (in pan) to coat. Sprinkle generously with salt and pepper. Cover with tinfoil, and bake for 45-60 minutes, opening to stir once or twice. During the last 10 minutes, reduce heat to 350.
